Swiss Cheese — photo 1

Swiss cheese is the Emmental type: a firm, mild, nutty cow's-milk cheese with large holes formed by propionic bacteria during ripening, sliced for sandwiches and melted in fondue and gratins. A 30 g serving has about 120 kcal, 8 g of protein and 9 g of fat, 5.5 g of it saturated, with about 270 mg of calcium, and it is high in vitamin B12, which the same bacteria produce. It is one of the less salty cheeses, with about 55 mg of sodium per serving.
