Cheddar — photo 1

Cheddar is a firm cow's-milk cheese from England, now made worldwide and aged from a few months (mild) to more than a year (sharp or mature); it is sliced for sandwiches, grated over dishes and melted into sauces. A 30 g serving has about 120 kcal, 7 g of protein and 10 g of fat, nearly 6 g of it saturated, with about 210 mg of calcium, 195 mg of sodium and some vitamin A and selenium. Aged cheddar contains almost no lactose.
