Corn Starch — photo 1

Corn starch is the refined starch of maize, used to thicken sauces, gravies, custards and puddings and to lighten cakes and batters. A 10 g spoonful gives about 38 kcal, almost all of it starch, with virtually no protein, fat, fiber, vitamins or minerals. Stir it into cold liquid before adding it to hot food to avoid lumps; it thickens once the liquid comes close to a boil.
