Exceptional nutritional value
Brussels sprouts, whole trimmed sprouts, values for the raw vegetable.
Brussels sprouts are small cabbage-like buds eaten roasted, steamed, boiled or shredded raw into salads. A 100 g portion, about five medium sprouts, has 43 kcal, 3.4 g of protein and 3.8 g of fiber, and supplies nearly the full daily value of vitamin C and about one and a half times that of vitamin K, with some folate and vitamin B6. Roasting or brief steaming keeps them firm; long boiling gives them a strong sulfur smell.
