Good nutritional profile
Whole-grain sorghum flour (jowar atta), values for the dry flour.
Whole-grain sorghum flour, called jowar atta in India, is used for bhakri and jowar roti there and in gluten-free breads and baking elsewhere. A 50 g portion, enough for about one bhakri, gives about 180 kcal, 4 g of protein and 3 g of fiber, with useful manganese, magnesium, thiamin and niacin. It contains no gluten, so doughs are crumbly and are usually kneaded with hot water.
