Exceptional nutritional value
Pigeon peas (toor dal) boiled without salt, values for the cooked peas.
Pigeon peas, split and hulled as toor or arhar dal, are the base of Indian sambar and everyday dal, and are eaten whole in the Caribbean and East Africa. A 150 g cooked portion gives about 180 kcal, 10 g of protein and 5 g of fiber, and is high in copper and folate, with useful manganese, thiamin and magnesium. Values are for hulled dal; whole pigeon peas have about twice the fiber. Dry pigeon peas swell to about 2.8 times their weight when cooked.
