Parmesan — photo 1

Parmesan is a hard cheese aged for many months, grated over pasta, risotto, soups and salads or shaved thin. Per 100 g it is very high in protein and calcium and also salty, with about 1.2 g of sodium. A 15 g serving, about three tablespoons grated, gives about 5 g of protein, 180 mg of calcium and 180 mg of sodium, and long aging leaves it almost free of lactose.
