Mung Beans — photo 1

Mung beans are small green beans cooked whole or split (moong dal) in Indian, Chinese and Southeast Asian dishes, from dal and khichdi to sweet soups. A 150 g cooked portion gives about 160 kcal, 10.5 g of protein and 11 g of fiber, and is high in folate, with useful copper, thiamin, manganese and magnesium. Dry mung beans swell to about 3.3 times their weight when cooked.
