Mayonnaise — photo 1

Mayonnaise is an emulsion of vegetable oil, egg yolk, vinegar or lemon juice and salt, used in sandwiches, salads and sauces. A 15 g serving, about a tablespoon, has about 102 kcal and 11 g of fat, most of it polyunsaturated from soybean or sunflower oil, about 95 mg of sodium and about a fifth of the daily value of vitamin K. Values are for full-fat mayonnaise with about 75% fat; mayonnaises with 50-67% fat, common in Europe and Russia, have proportionally fewer calories.
