Light Mayonnaise — photo 1

Light mayonnaise replaces part of the oil in mayonnaise with water, thickened with starch, and is used in the same way in sandwiches and salads. A 15 g tablespoon has about 36 kcal, 3.3 g of fat and 1.4 g of carbohydrate, about a third of the calories of regular mayonnaise. It has more salt per gram than regular mayonnaise, about 124 mg of sodium per tablespoon. Light mayonnaises sold in Europe and Russia often have 30-40% fat and more calories.
