Ghee — photo 1

Ghee is butter simmered until the water evaporates and the milk solids brown and are strained off, leaving almost pure milk fat; it is the traditional cooking fat of South Asia, used for frying, tempering spices and over rice and dal. A 10 g portion, about two teaspoons, has about 88 kcal and 10 g of fat, over 6 g of it saturated, with about 85 µg of vitamin A. Without water and milk solids it keeps for months unrefrigerated and can be heated hotter than butter.
