Dry Rice Noodles — photo 1

Dry rice noodles, from thin vermicelli to wide rice sticks, are made from rice flour and water and are soaked or boiled before use in pho, pad thai, stir-fries and spring rolls. A 60 g portion has about 220 kcal, almost all from starch, with under 4 g of protein and little fiber or fat. Soaked or boiled, they weigh about 3.3 times their dry weight, so 60 g dry gives roughly 200 g of cooked noodles.
