Dry Rice — photo 1

Long-grain white rice is milled rice with the bran and germ removed, boiled or steamed as a side dish or a base for many meals. A 75 g dry portion gives about 275 kcal, mostly from starch, and 5 g of protein; it is high in manganese, with useful selenium and copper, and has little fiber. Much US rice is enriched with iron and B vitamins; these values are for unenriched rice. Dry rice nearly triples in weight when boiled: 75 g makes about 210 g cooked.
