Dry Millet

Good nutritional profile

Hulled millet grain, values for the dry, uncooked grain.

Dry Millet — photo 1

Hulled millet grains before cooking, used for porridge, pilaf-style side dishes and baking; millet contains no gluten. A 60 g dry portion gives about 230 kcal, 7 g of protein and 5 g of fiber, and is high in copper and manganese, with useful thiamin, niacin, magnesium and folate. Log the dry weight: millet swells to about 3.2 times its weight when cooked, so 60 g dry makes about 190 g cooked.
