Exceptional nutritional value
Collard greens, leaves without the tough stems, values for the raw vegetable.
Collard greens are large, flat cabbage-family leaves, traditionally slow-cooked in the southern United States, shredded and sauteed as a side for feijoada in Brazil, and used in caldo verde soup in Portugal. A 60 g portion has about 19 kcal and supplies about twice the daily value of vitamin K, with useful vitamin C, folate, vitamin A, manganese and calcium. Raw leaves shrink to a fraction of their volume when cooked; remove the thick center rib first.
