Chicken Liver — photo 1

Chicken livers are eaten fried with onions, in pâté and in stews in many cuisines. A 100 g portion gives about 120 kcal and 17 g of protein, with about 3,300 µg of vitamin A (RAE), 590 µg of folate, 17 µg of vitamin B12 and 9 mg of iron, plus a lot of riboflavin and selenium. That vitamin A is more than three times the daily value and above the adult upper limit of 3,000 µg for preformed vitamin A.
