Carp — photo 1

Common carp is a freshwater fish widely eaten in Central and Eastern Europe and Asia, fried, baked, stewed or served at Christmas in several countries. A 150 g raw portion has about 190 kcal and 27 g of protein with 8 g of fat, and is high in vitamin D, phosphorus and vitamin B12. Carp has many fine intermuscular bones, so fillets are often scored before frying.
