Cauliflower is a vegetable of the cabbage family, eaten raw, steamed, roasted or mashed. A 100 g portion has only 25 kcal and supplies more than half the daily value of vitamin C, with some folate, vitamin K and vitamin B6. Grated and briefly cooked, it is often used in place of rice, with about a fifth of the carbohydrate of cooked white rice.
