Exceptional nutritional value
Raw green cabbage.
Cabbage is a firm-headed leafy vegetable eaten raw in slaw, cooked in soups and stews, or fermented into sauerkraut. A 90 g portion, about one cup chopped, has about 23 kcal and supplies more than half the daily value of vitamin K and over a third of vitamin C, with some folate and fiber. Red cabbage has more vitamin C and less vitamin K than the green cabbage these values describe.
