Eggplant

Exceptional nutritional value

Eggplant (aubergine) with the skin, values for the raw vegetable.

Eggplant — photo 1

Eggplant, also called aubergine, is eaten grilled, roasted, stewed or fried, and is the base of dishes such as baba ganoush, moussaka and ratatouille. A 100 g portion has only 25 kcal and 3 g of fiber but little of any single vitamin or mineral. Its spongy flesh soaks up oil when fried, so fried eggplant can have several times the calories of the raw vegetable; roasting or grilling with a little oil avoids that.
