Carrot — photo 1

Carrots are a root vegetable eaten raw as a snack or in salads, or cooked in soups, stews and side dishes. One medium carrot of about 60 g has 25 kcal and supplies more than half the daily value of vitamin A, mostly as beta-carotene, with a little fiber and vitamin K. Beta-carotene is absorbed better from cooked carrots and when the meal contains some fat.
