Moderate nutritional value
Crisp breakfast waffles.
Waffles are a batter of flour, eggs, milk, butter and sugar cooked in a hot waffle iron until crisp outside, usually served with butter and maple syrup or whipped cream. They are mostly refined carbohydrate with moderate fat and modest protein, and the toppings add sugar. Fresh fruit and a spoonful of yogurt instead of syrup cut the added sugar.

Preheat and lightly grease a waffle iron.
Whisk the flour, baking powder, sugar, and salt together in a large bowl.
Beat the egg yolks with the milk, melted butter, and vanilla, then stir into the dry mix until smooth.
Whip the egg whites to soft peaks and gently fold them into the batter for a light texture.
Ladle batter onto the hot waffle iron and close, cooking until golden and crisp, about 4 minutes.
Repeat with the remaining batter, keeping cooked waffles warm.
Serve hot with maple syrup, berries, or whipped cream.
