Tomato Paste — photo 1

Tomato paste is tomatoes cooked down and strained to a thick concentrate, used by the spoonful to add color and depth to sauces, soups, stews and borscht. A 15 g tablespoon has about 12 kcal and 150 mg of potassium, and tomato paste is a concentrated source of lycopene. It has about 26% dry matter against about 5.5% in fresh tomatoes, so one tablespoon holds the solids of roughly 70 g of fresh tomato.
