Tempeh — photo 1

Indonesian cake of cooked soybeans bound by a Rhizopus mold during fermentation, sliced and fried, steamed, baked or crumbled into stir-fries and curries. A 100 g portion gives about 190 kcal and 20 g of protein, and is high in manganese, copper, phosphorus and riboflavin, with useful magnesium, calcium and iron. Unlike tofu it is made from whole soybeans, so it has more protein and fiber per gram; values are for tempeh before cooking.
