Sorrel — photo 1

Sorrel is a sour leafy green grown across Ukraine and Russia, where it is the base of green borscht (zelenyi borshch) and is also used in pie fillings and salads. A 50 g portion of leaves has about 11 kcal and 24 mg of vitamin C, is high in vitamin K (about 165 µg) and has about 100 µg RAE of vitamin A from beta-carotene, with some magnesium and iron. The sour taste comes from oxalic acid. Add it near the end of cooking; the leaves wilt fast and turn olive green.
