Sauerkraut

Good nutritional profile

Fermented shredded cabbage, canned or jarred, values for solids and liquid.

Sauerkraut — photo 1

Sauerkraut is finely shredded cabbage fermented with salt, eaten cold as a side or salad in Central and Eastern Europe and cooked with pork and sausages. A 100 g portion has about 19 kcal, 3 g of fiber and 15 mg of vitamin C, but also about 660 mg of sodium. These values are for shelf-stable canned or jarred sauerkraut, which is heat-treated and has no live bacteria; rinsing and draining it lowers the sodium.
