Pistachios — photo 1

Pistachios are eaten roasted as a snack, usually from the shell, and used in baking, ice cream and Middle Eastern sweets. A 30 g portion of kernels has about 170 kcal, 6 g of protein and 3 g of fiber, and is high in copper and vitamin B6, with a good amount of thiamin and about 300 mg of potassium. Most of the fat is monounsaturated. Values are for unsalted kernels; weigh them without shells, and salted pistachios add sodium.
