Cashews — photo 1

Cashews are eaten as a snack, added to stir-fries and curries, and blended into creamy sauces and dairy-free spreads. A 30 g handful, about 18 nuts, has about 166 kcal and 5.5 g of protein, and is very high in copper and high in magnesium and manganese, with good amounts of zinc and iron. They have more starch and less fiber than almonds or walnuts, and even raw cashews are heat-treated to remove an irritant from the shell.
