Napoleon Cake — photo 1

Napoleon cake is the Russian version of mille-feuille: many thin layers of buttery puff pastry stacked with vanilla custard cream and covered with pastry crumbs. Butter in both the pastry and the cream makes it high in fat, much of it saturated, and a 130 g slice has about 410 kcal. A thinner slice of about 80 g has around 250 kcal.

Ingredients

  • All-purpose flour 225 g
  • Unsalted butter, cold 220 g
  • Eggs 3 large
  • Ice water 50 ml
  • White vinegar 1 tsp
  • Salt 1 pinch
  • Whole milk 400 ml
  • Sugar 100 g
  • Vanilla extract 1 tsp
Prep
60 min
Cook
70 min

Instructions

  1. 1

Grate 150 g of the cold butter into 200 g of the flour with the salt and rub together quickly until the mixture looks like coarse crumbs.

  2. 2

Beat 1 egg with the ice water and vinegar, stir it into the flour and gather into a dough without kneading; divide into 6 pieces and chill for 30 minutes.

  3. 3

Roll each piece very thin on baking paper, cut out a 22 cm round, prick it with a fork and bake at 200C for 8-10 minutes until golden, baking the trimmings as well.

  4. 4

For the custard, whisk the remaining 2 eggs, the sugar and the remaining 25 g flour with a little of the milk, then whisk in the rest of the milk.

  5. 5

Cook over medium heat, stirring constantly, for 5-7 minutes until the custard boils and thickens, then cool it completely under plastic wrap.

  6. 6

Beat the remaining 70 g butter, softened, with the vanilla until fluffy, then beat in the cold custard a spoonful at a time.

  7. 7

Stack the layers with the custard cream between them and over the top and sides, cover with the crushed trimmings and refrigerate overnight before slicing.
