Limited nutritional benefit
Baked New York-style cream cheese filling on a graham cracker crust.
New York-style cheesecake is a dense filling of cream cheese, sugar, eggs and sour cream baked slowly on a graham cracker crust and chilled until firm. It is high in fat, much of it saturated, and high in added sugar, with only a little protein. A 125 g slice is about 400 kcal, so a slice half that size served with fresh berries keeps it near 200 kcal.

Heat the oven to 180C and line the base of a 20 cm springform tin with baking paper.
Crush the graham crackers into fine crumbs, mix them with the melted butter and 15 g of the sugar, press firmly into the tin and bake for 10 minutes.
Lower the oven to 150C. Beat the cream cheese with the remaining sugar, the flour and the salt on low speed until smooth.
Beat in the eggs one at a time, then the sour cream, vanilla and lemon zest, mixing only until combined.
Wrap the outside of the tin in foil, pour in the filling and set the tin in a roasting pan. Pour hot water into the pan to come 2 cm up the sides.
Bake for 60 minutes, until the edge is set but the center still wobbles, then turn off the oven and leave the cheesecake inside with the door ajar for 60 minutes.
Run a knife around the edge and chill the cheesecake overnight before slicing.
