Napa cabbage (Chinese cabbage, pe-tsai), values for the raw leaves.
Napa cabbage is an elongated, pale Chinese cabbage with tender crinkled leaves, eaten raw in salads, stir-fried, added to soups and dumplings, and fermented into kimchi. A 100 g portion has only 16 kcal and supplies about a third of the daily value of vitamin C and vitamin K and a fifth of folate. It is milder and more tender than green head cabbage and cooks in a few minutes.
