Millet — photo 1

Millet is a small, gluten-free grain boiled into a fluffy side dish or a soft porridge, common in Africa, India and Eastern Europe. A 150 g cooked portion gives about 180 kcal, 5 g of protein and 2 g of fiber, and it is a useful source of copper, with some magnesium, phosphorus and manganese. Dry millet swells to about 3.2 times its weight when cooked, so 150 g cooked is about 47 g dry.
