Good nutritional profile
Korean fermented napa cabbage kimchi, values as sold.
Kimchi is the Korean side dish of napa cabbage salted and fermented with chili, garlic, ginger and scallions, usually with fish sauce or salted shrimp, and served with almost every Korean meal or cooked into stews and fried rice. A 50 g side has about 8 kcal and about 250 mg of sodium, with about 22 µg of vitamin K, nearly a fifth of the daily value, and some vitamin C and folate. Unpasteurized kimchi keeps fermenting in the fridge and grows more sour with time.
