Bok Choy — photo 1

Bok choy is a Chinese cabbage with white stalks and dark green leaves, eaten stir-fried, steamed or in soups and noodle dishes. A 100 g portion has only 13 kcal and supplies about half the daily value of vitamin C, over a third of vitamin K and a quarter of vitamin A, with some folate and calcium. The stalks need a minute or two longer to cook than the leaves; baby bok choy can be cooked whole or halved.
