Kelp (kombu brown seaweed), values for the raw seaweed.
Kelp is a large brown seaweed eaten in Japan, Korea, China and the Russian Far East, as kombu for broth, in salads such as Russian morskaya kapusta, and in soups. A 50 g portion has about 22 kcal and about 90 µg of folate, with useful amounts of vitamin K and magnesium. Kelp is also one of the richest food sources of iodine, which these values do not show; the amount varies widely between products.
