Good nutritional profile
Levantine salad of greens, vegetables and toasted pita with sumac.
Fattoush is a Levantine bread salad of romaine, tomato, cucumber, radish, green onion, parsley and mint, tossed with crisp toasted pita and a dressing of olive oil, lemon juice and sumac. It is light and mostly vegetables; the pita adds refined carbohydrate and the olive oil most of the fat. Baking the pita rather than frying it, as in this version, keeps the fat down.
