Dry Kidney Beans

Exceptional nutritional value

Dry red kidney beans, values for the raw, uncooked seeds.

Dry Kidney Beans — photo 1

Dry red kidney beans as sold, soaked and boiled for chili, rajma and stews. A 60 g dry portion gives about 200 kcal, 13.5 g of protein and 9 g of fiber, and is high in folate, copper, thiamin, manganese and iron. Log the dry weight: kidney beans swell to about 2.7 times their weight when cooked, so 60 g dry makes about 160 g cooked. Boil them hard for at least 10 minutes, as undercooked kidney beans are toxic.
