Moderate nutritional value
Blended soup of mushrooms, onion and broth finished with cream.
Cream of mushroom soup is sliced white mushrooms and onion cooked in butter, thickened with a little flour, simmered in chicken broth, blended and finished with heavy cream. A 300 g bowl has about 230 kcal but 11 g of saturated fat from the butter and cream, and about 920 mg of sodium from the broth. Using low-sodium broth and half the cream, or milk, makes a lighter bowl.

Slice the mushrooms and finely chop the onion and garlic.
Melt the butter in a large pot and cook the onion over medium heat for 5 minutes until soft.
Add the mushrooms and thyme and cook for 10 minutes, stirring, until their liquid has mostly evaporated; add the garlic for the last minute.
Sprinkle in the flour and stir for 1 minute, then gradually pour in the broth, stirring.
Simmer for 15 minutes, then blend until smooth, leaving a few pieces if you like.
