Moderate nutritional value
Chicken in a tomato, cream and butter sauce.
Butter chicken, or murgh makhani, is grilled or tandoori chicken simmered in a mild, spiced tomato sauce enriched with cream and finished with butter. It is high in protein, and the cream and butter make it high in fat, much of it saturated. Using yogurt or half the cream in the sauce cuts the fat; serve it with plain rice and a vegetable side rather than buttered naan.

Marinate the chicken in the yogurt with half the garlic, ginger and a teaspoon of garam masala for 30 minutes.
Sear the chicken in a hot pan with a little butter until browned on all sides, then set aside.
Melt the remaining butter and gently fry the rest of the garlic and ginger with the cumin and chili powder.
Add the tomato puree and sugar, season with salt and simmer for 12 minutes until rich and thickened.
Stir in the cream and remaining garam masala, then return the chicken and simmer for 10 minutes until tender.
Finish with an extra knob of butter for gloss and serve with naan or basmati rice.
