Moderate nutritional value

Kashmiri lamb curry braised in yogurt with red chili and spices.

Rogan Josh — photo 1

Rogan josh is a lamb curry from Kashmir: cubes of lamb are browned, then braised slowly with onion, yogurt, tomato, fennel and whole spices and colored deep red by mild Kashmiri chili. A 250 g serving has about 495 kcal and 32 g protein, but also about 35 g fat, 13 g of it saturated, mostly from the lamb. Trimming visible fat from the meat and skimming the sauce before serving lowers the fat.

Instructions

  1. 1

Heat the oil or ghee in a heavy pot over medium-high heat and fry the cardamom and cinnamon for 1 minute until fragrant.

  2. 2

Brown the lamb in batches for 8-10 minutes in total, then lift it out onto a plate.

  3. 3

Lower the heat to medium, add the onions and cook for 10 minutes until deep golden, then stir in the garlic and ginger for 1 minute.

  4. 4

Add the chili powder, fennel, salt and tomato and cook for 5 minutes until the tomato softens.

  5. 5
