Rice Noodles — photo 1

Rice noodles are made from rice flour and water and are used in pho, pad thai, stir-fries and soups across Southeast and East Asia. A 180 g cooked portion has about 195 kcal, almost all from starch, with 3 g of protein and hardly any fat or fiber; selenium is the only nutrient present in a notable amount. Dry rice noodles weigh about 3.3 times as much once cooked, so 60 g dry gives roughly 200 g cooked.
