Good nutritional profile
Creamy blended soup of pumpkin or butternut squash with onion.
Pumpkin soup is pumpkin or butternut squash simmered with onion, garlic and broth, then blended smooth and finished with cream and a pinch of nutmeg. It is low in calories and protein; the orange flesh is rich in beta-carotene, and the cream and butter supply most of the fat. Using milk or a spoonful of yogurt instead of the cream makes a lighter bowl.
