Exceptional nutritional value
Russian side of white cabbage braised with carrot, onion and tomato.
Tushenaya kapusta is shredded white cabbage slowly braised with fried onion and carrot, tomato paste and bay leaf until soft, a standard Russian side for sausages, meat and potatoes. A 200 g serving has about 140 kcal and 6 g of fiber, plus vitamin C and vitamin K from the cabbage; almost all of the fat comes from the sunflower oil. Adding the salt at the end makes it easier to use less.

Finely shred the cabbage, dice the onion and coarsely grate the carrot.
Heat the oil in a large deep pan or Dutch oven and fry the onion over medium heat for 5 minutes, then add the carrot and cook 5 minutes more.
Add the cabbage, stir well and cook uncovered for 10 minutes, stirring, until it wilts.
Stir the tomato paste and sugar into the water and pour it over the cabbage.
Add the bay leaves, salt and pepper, cover and braise over low heat for 30 to 35 minutes, stirring now and then, until the cabbage is soft.
Uncover for the last 5 minutes if liquid remains, remove the bay leaves and serve hot as a side dish.
