Lagman

Good nutritional profile

Central Asian hand-pulled noodles with a beef and vegetable sauce.

Lagman — photo 1

Lagman is a Central Asian dish of long wheat noodles, traditionally hand-pulled, topped with a thick sauce of beef or lamb stewed with onion, bell peppers, tomatoes, carrot, radish, garlic and cumin. It is a fairly balanced bowl: the noodles supply most of the carbohydrate, the meat adds protein, and the vegetables add fiber and vitamin C. More vegetables and fewer noodles make a lighter bowl.
