Good nutritional profile
Grilled meat on skewers.
Kebab is pieces of marinated lamb or chicken threaded on skewers, often with onion and pepper, and grilled over high heat, usually served with rice or flatbread and salad. It is high in protein and low in carbohydrate, with fat that depends mostly on the cut: chicken breast is leaner than lamb. The rice or flatbread on the side adds most of the carbohydrate to the meal.

Whisk olive oil, garlic, cumin, paprika, coriander, lemon juice, salt and pepper into a marinade.
Toss the meat in the marinade and chill at least 1 hour, or overnight for deeper flavor.
Thread the meat onto skewers, alternating with chunks of onion and bell pepper.
Heat a grill or grill pan to high.
Grill the skewers 10 to 12 minutes, turning to char all sides, until the meat is cooked through and juicy.
Rest a few minutes, then serve with flatbread, rice or a fresh salad.
