Apple Pie

Limited nutritional benefit

Double-crust pie filled with sliced apples, sugar and cinnamon.

Apple Pie — photo 1

Apple pie is a double-crust butter pastry filled with sliced apples tossed with sugar, cinnamon and a little flour, baked until the filling bubbles. Most of its energy comes from the pastry and the added sugar, and the apples contribute only a little fiber. A 155 g slice is about 410 kcal, and a scoop of vanilla ice cream on top adds about 140 kcal more.

Ingredients

  • Plain flour 280 g
  • Cold butter, cubed 180 g
  • Sugar 120 g
  • Salt 1/2 tsp
  • Ice water 80 ml
  • Tart apples 1 kg (about 6 medium)
  • Lemon juice 1 tbsp
  • Ground cinnamon 1.5 tsp
  • Ground nutmeg 1/4 tsp
  • Milk 1 tbsp
Prep
45 min
Cook
60 min

Instructions

  1. 1

Rub the butter into 260 g of the flour with 10 g of the sugar and the salt until the mixture looks like coarse crumbs, then stir in the ice water and press it into a dough.

  2. 2

Divide the dough into two discs, wrap them and chill for 30 minutes.

  3. 3

Heat the oven to 200C. Peel, core and thinly slice the apples and toss them with the lemon juice, 100 g of the sugar, the remaining flour, the cinnamon and the nutmeg.

  4. 4

Roll out one disc, line a 23 cm pie dish with it and fill it with the apples, mounding them in the center.

  5. 5

Roll out the second disc, lay it over the filling, trim and crimp the edges and cut a few slits in the top.

  6. 6

Brush the top with the milk, sprinkle with the remaining sugar and bake for 20 minutes, then lower the oven to 180C and bake for 35-40 minutes more, until the filling bubbles through the slits.

  7. 7

Leave the pie to cool until just warm so the filling sets before slicing.
