Peel the potatoes and cut them into even sticks about 1 cm thick.
Soak in cold water for 30 minutes, then drain and pat thoroughly dry.
Heat the oil to 160 C and blanch the fries for 4-5 minutes without coloring; drain.
Raise the oil to 190 C.
Fry the potatoes again for 3-4 minutes until golden and crisp.
Drain on paper towels and season immediately with salt while hot.
