Bring the water, butter and salt to a boil in a saucepan.
Take off the heat, add all the flour at once and stir vigorously into a smooth dough.
Let the dough cool slightly, then beat in the eggs one at a time until glossy and pipeable.
Spoon the dough into a piping bag fitted with a large star tip.
Heat the oil to 180C and pipe strips of dough into the oil, cutting them with scissors.
Fry for 2 to 3 minutes per batch, turning, until deep golden and crisp, then drain.
Toss the warm churros in the combined sugar and cinnamon and serve at once.
