Good nutritional profile
Fried pancakes of farmer's cheese (tvorog), egg and a little flour.
Syrniki are small, thick pancakes of tvorog (farmer's cheese) mixed with egg, sugar and a little flour, pan-fried until golden and eaten for breakfast in Russia and Ukraine. A serving of three has about 300 kcal, 22 g of protein and 14 g of fat from the cheese and frying oil, plus about 8 g of sugar. Plain yogurt and berries instead of sour cream and jam keep the fat and sugar lower.

If the tvorog is wet or grainy, press it through a sieve or blend it briefly until smooth.
Mix the tvorog with the egg, sugar, vanilla and salt, then stir in 50 g of the flour to make a soft, slightly sticky dough.
With floured hands, divide the dough into 12 pieces and shape each into a patty about 1.5 cm thick.
Coat the patties in the remaining flour and shake off the excess.
Heat the oil in a large frying pan over medium heat.
Fry the syrniki for 3-4 minutes per side, until golden brown, lowering the heat if they brown too quickly.
Drain briefly on paper towels and serve warm with sour cream.
