Exceptional nutritional value
Orange-fleshed sweet potato, values for the flesh baked in its skin.
Sweet potato is a starchy root, only distantly related to the potato, eaten baked, roasted or mashed. A 130 g portion gives about 120 kcal and 4 g of fiber, and its beta-carotene provides more than the full daily value of vitamin A, with useful vitamin C, vitamin B6, manganese, copper and potassium. About 8 g of the carbohydrate is sugar, part of it formed from starch during baking.
